- There's something quite magnetic about the buzz in Seoul and so I love coming here.

 

- It's a great honor for me to be sitting here with you today, because I am really part of that generation that grew up watching your shows and who thereby came to think of eating and cooking as an integral part of human happiness.

 

- There is an unfortunate stereotype about food in the UK. The reputation here in Korea and some other parts of the world is that The UK has some of the worst food in Europe. So, where do you think this reputation comes from?

 

- UK's been desperate to get rid of that brown slurry mess that was not good for our image. There's been such a wonderful multi-cultural melting pots of Korean, Chinese, Indian.. I think London now is one of the most feistiest, one of the most competitive culinary cities anywhere on the planet. So I think there's a lot of correctness to your question from two decades ago. But currently now, we've got some of the best Asian restaurants in London, some of the best fine dining, and some of the best street food anywhere in the world now.

- So you think that reputation is outdated? 

- I think that's long outdated.

 

- So there is, sort of the flipside to the reputation of the UK having bad food is London being the shining star in the constellation of food destinations. I find it a little contradictory. ....... What do you think makes Londoners so passionate about the food scene and restaurants?

 

- I'm gonna correct you. I don't think we've gone to the very top of the tree. I still think there's room for improvement. I think we can see ourselves up there with Paris, New York, Madrid, Copenhaagen. We're in that mix now but we're not the very top. 

 

- Where would you say is the No.1 foodie destination?

 

- The whole idea of "celebrity chef" basically originated in the UK, with you, in many ways. Why do you think it was in the UK that the idea of a celebrity chef started and gained traction?

 

- I think learning how to cook, watching your shows, in many ways, changed my life in a way that's more profound than any geography or history lesson.

 

- So let's say there's a Korean foodie. And they're watching this channel and they say, "Okay, I'm gonna take Mr. Ramsay's advice." "I'm gonna go to London and I'm gonna try to suck in all the exciting things about food that's going on in London." "I wanna come back with my stereotype about British food broken and not reinforced." Let's just say there's a person who's willing to take the first step. What would be the tips that you'd give him? What would you tell him so he can have a successful food experience in London and not come back another disappointed tourist?

 

- So, there's boroughs and neighborhoods now in and around London. So Shoreditch, it's a very cool place.
To be seen is phenomenal street food, these tremendous gastropubs. And there's amazing pop-ups happening every night. This is sort of melting pot of magic. There's restaurants being built in containers. So I would suggest that you spend time in that multi-cultural pot. Indian cuisine, for instance, is one of the nation's favorite dishes. Chicken tikka masala. Understanding how to blend a fresh garam masala, understanding how to make fresh naan breads and then even to going down to a beautiful cottage pie or shepherd's pie. There's quite something unique about how you put the mashed potatoes in there. So, seek the real DNA. Stay off the tourist trap. And do what I did in Paris at the age of 22. Grab all the magic, stick it in your rucksack and run back to Seoul.

 

- A real exciting area is Notting Hill. It's just a cool, hip vibe. 

 

- Before, when I was living in Europe, Gordon Ramsay restaurants were very upscale. At the time, I was 25. Didn't have enough money to go to your restaurants. But now you're opening burger joints and pizza joints. What brings you from the stratosphere of Michelin Stars, cooking gods and haute cuisine back down to the land of mere mortals?

 

- I'm more comfortable at this level than I am at three-star. I think it has to do with my backgrounds in terms of growing up on the council estate and having very little food at the table and respecting watching my mom having three jobs. 

 

- So my philosophy in the current situation is be more appreciative on the importance of breaking bread with family.
